There are countless sites drowning us with informations regarding easy home cooking.
It's actually what we call information overload.But in most of the sites you can not go beyond few lines as already you would have come across atleast 3 ingredients which you have no idea about or even if you have fair idea you have 'nt got a clue how and from where to procure them.
While creating this blog I was surprised to note that a name like 'easy bengali home cooking' is still available which in a way meant there was not much information available on the subject.
It is not only surprising but quite distressing because bengali cuisine is I think the most underrated and least understood cuisine in the world.
Bengali people among all South Asian communities are most passionate about food very much like French. Bengali cuisine is a one of the finest cuisine in the world with delicate flavors,selective use of spices and ingredients.
Very few Indian cuisines as per my knowledge have course meal system like french people do.
The various courses are to be served strictly as per norm.For instance the first course 'Shukto' or 'Shakbhaja' has to be served in the beginning only and not after 'Dal and Bhaja'.
There is a scientific reason behind it. The 'Teto Shukto' which contains bitter gourd or 'Karola' cleanse the palate before meal.
The last course is usually sweet 'Chatni' or sweet and sour 'tak' which sends signal to the brain that the meal has ended and makes one feel full and satiated.
Surprisingly modern bengali nuclear families are shying away from this wonderful cuisine of their ancestors for mainly one reason.Many young bengali mom tell me that it is difficult and time consuming to cook a proper bengali meal at home.Apparently it is easier to cook rajma chawl, pasta or noodles!! I think regular bengali everyday meal is very easy to cook with few ingredients and fewer spices.
They not only taste good but healthy too with more stress on fish and vegetables.
Why there are so few bengali restaurants? The main reason is most of the bengali recipes can not be prepared in assembly line style.Unlike in most 'indian' restaurants' masalas can not prepared beforehand and kept. They need to be freshly prepared and served.
I wish to build this blogsite providing tips to cook easy,healthy , tasty and authentic( I am not too fond of fusion cuisine but in favor of substitution of ingredients in case of need) bengali home style food.
Hope we all would enjoy this fabulous sensory journey through delicate and subtle flavors of bengali everyday cooking.
