PANEER POSTO( COTTAGE CHEESE WITH POPPY SEEDS)

This is a easy but unusual recipe. 'Paneer posto' can also be called 'posto with chhanaa'.Channaa is homemade cheese usually made at bengali homes from cow's milk.All famous bengali sweets like 'rasagolla, sandesh, kanchagolla are all made from 'Chhanaa.'If you can not prepare it at home buy readymade paneer from some good neighborhood dairy.It will test as good. INGREDIENTS. Paneer or cottage cheese -500 gms 1 bay leaf 3 tbs of poppy seeds( bengali folk's beloved POSTO) 2 cloves of garlic. few green chillies 1 large onion salt to taste 1 tsp sugar to balance the saltiness of the dish 2 tbs of oil( no mustard oil in this recipe) METHOD 1. Soak posto in water. 2.Cut paneer into small 1 inch size.Lightly saute them in oil and keep aside. 3. Chop onion( not too finely) and green chillies 4. Make a paste of posto with one or two green chilli,garlic,a little salt and 1 tbsp of water. 5.Heat oil in the kadai .Add bay leaf and chopped onion.Saute till lightly brown. Add posto paste and a little water.It would be a thick creamy gravy so add water accordingly. 6.After the gravy starts boiling add paneer pieces.Mix thoroughly and let it simmer for 2 mins. 7.Taste seasoning and add sugar.
