ALU METHI'R SHAAK ( POTATO WITH FENUGREEK LEAVES)
I simply love green leafy vegetables specially fenugreek leaves. It's very easy to make with few ingredients. The only trouble seems to be cleaning and chopping them.But nowadays you get methi saag (fenugreek leaves) in sealed packets,sorted and cleaned, in any neighborhood supermarket. All you have to do is wash them thoroughly under running water and chop them finely.
INGREDIENTS:
2 regular bunches of methi leaves, washed, cleaned and chopped
2 large potato cut into small cubes
2 large cloves of garlic crushed or chopped
1/4 tsp of methi seeds( fenugreek seeds)
1 dried whole red chiili
1/2 tsp of turmeric powder
few green chilli chopped
salt to taste
2 tbs of oil
1 tsp of sugar

METHOD:
1. Heat oil in a kadai.Add methi seeds,garlic, dried red chilli and chopped green chillies.
2. Add cubed potatoes and fry them till light brown.
3.Add chopped methi leaves,salt and turmeric .Cover and cook till done.
4.Check seasoning. Add the sugar. Increase the heat and let all the water released by the methi leaves to get evaporated.Mix well and serve with hot rice.
