DIM PALANG( SPINACH WITH EGGS)

This is a dish for those who do'nt like to eat their greens specially children.My daughter likes other leafy vegetables but not spinach(not even Palak paneer) but after much trial and error with spinach I have discovered this interesting twist with spinach.It's treat for egg lovers like me who love all forms of egg.

INGREDIENTS:

3 cups of chopped spinach

1 onion thinly sliced

3 cloves of garlic (chopped)

2 green chillies roughly chopped

1 dried whole red chilli

1/2 tsp turmeric powder

4 eggs (beaten and mixed with a little salt)

2 tbs of oil

salt and sugar to taste

METHOD:

1. Wash and drain spinach leaves and finely chop them.

2. Heat oil in a kadai.Add whole dried red chilli,chopped garlic and onion and green chillies.Saute for a while till onion takes a pinkish brown color.

3.Add spinach,salt and turmeric powder.

4.Cover and cook till the spinach gets cooked but does not lose color.Increase the heat till water given out by the vegetable evaporates.

5.Lower the heat and take the vegetable to one side of the kadai.On the other side add a little oil and heat it.Add beaten eggs.

6.Cook the eggs and break it into small chunks.Mix it with cooked spinach.Taste seasoning.Add a little sugar(optional, but I feel sugar brings out a balanced taste)

Serve hot with chapati or rice
