This high protein preparation is specially healthy for growing kids. If they are not fond of dal, then this recipe might be suitable for making them eat it.My daughter loves it.It is specially good to eat with chapati or parota(paratha) on a chilly winter night.
INGREDIENTS:
1 cup Masoor dal( split red gram)
1 medium size onion finely sliced
2 pods of garlic chopped
1 inch ginger chopped
2 green chillies roughly chopped
1 dried whole red chilli
1 bay leaf
1 large tomato chopped
1/2 tsp turmeric powder
salt to taste
4 large eggs beaten with little salt
2 tbs of oil
3 tbs of chopped coriander leaves
METHOD:
1.Boil dal with sufficient water( do'nt add too much water as this dal would be slightly thick),salt and turmeric powder.
2.Heat oil in a kadai.Add bay leaf,dried whole red chilli,chopped ginger,garlic and green chillies.
Saute for a while. Add sliced onion. Saute till golden brown.
3.Add chopped tomatoes.Fry for a while till oil separates
4. Add beaten eggs. Fry the eggs till fully cooked mixing it with onion tomato mixture while taking care not to break them into too small pieces but medium size chunks.
5.Add the boiled dal.Check seasoning
6.Sprinkle chopped coriander leaves and serve hot with hot rice or chapati.
